iPhone 4S is no longer able to keep up with the latest iOS. Now what? What is everyone doing with their old phones that are still in GREAT condition but no longer keep up with the latest iOS?

They still function with the stock applications. They’re great as a secondary phone or for emergency purposes for younger children (or grand-parents ;>). They obviously work great as iPods too. Ultimately, it really depends on the apps you need to use. Unfortunately, many apps now require more advanced versions of iOS so that is the true limiting factor.
